【摘要】:1ThisInternationalStandarddescribesthedeterminationoftheα-amylaseactivityofcerealsbytheFallingNumbermethodaccordingtoHagberg-Perten.Thismethodisapplicabletocerealgrains,inparticulartowheatandryeandtheirrespectiveflours,durumwheatanditssemolina.ForthepurposesofthisInternationalStandardtheterm"flour"includessemolinaandgroundgrain(wholemeal),theparticlesizesofwhicharedefined.Thismethodisnotapplicableforthedeterminationoflowlevelsofα-amylaseactivity,whichcanbecarriedoutinaccordancewithISO7973.2ByconvertingtheFallingNumberintoaLiquefactionNumber(LN),itispossibletousethismethodtoestimatethecompositionofmixturesofgrain,flourorsemolinawithknownFallingNumbervaluesnecessarytoproduceasampleofarequiredFallingNumber.
